  • Firm tofu - 200 grams, drained and crumbled

  • Zucchini - 1 small, grated and excess water squeezed out
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Chickpea flour - 100 grams
  • Rice flour - 50 grams
  • Cornstarch - 30 grams
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - for frying

Steps

  1. In a large bowl, combine the crumbled tofu, grated carrot, grated zucchini, chopped green onions, minced garlic, and grated ginger.
  2. Add the chickpea flour, rice flour, cornstarch, beaten egg, salt, black pepper, and sesame oil to the vegetable mixture. Mix until well combined and a thick batter forms.
  3. Heat vegetable oil in a frying pan over medium heat until hot.
  4. Scoop about 2 tablespoons of the batter for each fritter and carefully place it in the hot oil, flattening slightly with a spatula.
  5. Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to avoid burning.
  6. Remove the fritters from the pan and drain on paper towels to absorb excess oil.
