- Firm tofu - 200 grams, drained and crumbled
- Carrot - 1 medium, grated
- Zucchini - 1 small, grated and excess water squeezed out
- Green onions - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Chickpea flour - 100 grams
- Rice flour - 50 grams
- Cornstarch - 30 grams
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame oil - 1 tablespoon
- Vegetable oil - for frying
Steps
- In a large bowl, combine the crumbled tofu, grated carrot, grated zucchini, chopped green onions, minced garlic, and grated ginger.
- Add the chickpea flour, rice flour, cornstarch, beaten egg, salt, black pepper, and sesame oil to the vegetable mixture. Mix until well combined and a thick batter forms.
- Heat vegetable oil in a frying pan over medium heat until hot.
- Scoop about 2 tablespoons of the batter for each fritter and carefully place it in the hot oil, flattening slightly with a spatula.
- Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to avoid burning.
- Remove the fritters from the pan and drain on paper towels to absorb excess oil.
- Serve warm, optionally with a dipping sauce like soy sauce or sweet chili sauce.
