Ingredients

  • Cooked jasmine rice - 2 cups
  • Firm tofu - 200 grams, pressed and cubed
  • Carrot - 1 medium, diced
  • Bell pepper (red or yellow) - 1, diced
  • Green peas - 1/2 cup (fresh or frozen)
  • Green onions - 2, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish (optional)

Steps

  1. Press the tofu for at least 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger until fragrant, about 30 seconds.
  5. Add the diced carrot and bell pepper to the skillet, cooking for 3-4 minutes until slightly tender.
  6. Stir in the green peas and cook for an additional 2 minutes.
  7. Add the cooked jasmine rice to the skillet, breaking up any clumps. Pour in the gluten-free soy sauce and sesame oil, stirring until everything is well combined and heated through, about 3-4 minutes.
  8. Fold in the crispy tofu and sliced green onions, mixing gently. Season with salt and black pepper to taste.
  9. Serve hot, garnished with sesame seeds if desired.
