- Cooked jasmine rice - 2 cups
- Firm tofu - 200 grams, pressed and cubed
- Carrot - 1 medium, diced
- Bell pepper (red or yellow) - 1, diced
- Green peas - 1/2 cup (fresh or frozen)
- Green onions - 2, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Gluten-free soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish (optional)
Steps
- Press the tofu for at least 15 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger until fragrant, about 30 seconds.
- Add the diced carrot and bell pepper to the skillet, cooking for 3-4 minutes until slightly tender.
- Stir in the green peas and cook for an additional 2 minutes.
- Add the cooked jasmine rice to the skillet, breaking up any clumps. Pour in the gluten-free soy sauce and sesame oil, stirring until everything is well combined and heated through, about 3-4 minutes.
- Fold in the crispy tofu and sliced green onions, mixing gently. Season with salt and black pepper to taste.
- Serve hot, garnished with sesame seeds if desired.
