Ingredients

  • Jasmine rice - 1 cup (uncooked)
  • Firm tofu - 200 grams, cubed
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Green peas - 1/2 cup (frozen or fresh)
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions. Once cooked, spread the rice on a baking sheet to cool.
  2. In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the pan and set aside.
  3. In the same pan, add the remaining vegetable oil and heat it. Sauté the minced garlic and ginger until fragrant, about 1 minute.
  4. Add the diced carrot and bell pepper to the pan, and cook for 3-4 minutes until they begin to soften.
  5. Stir in the green peas and continue to cook for an additional 2 minutes.
  6. Add the cooled jasmine rice to the pan, and mix well with the vegetables. Pour in the gluten-free soy sauce and sesame oil, stirring to combine evenly.
  7. Add the crispy tofu back into the pan, and mix gently to incorporate. Season with salt and black pepper to taste.
  8. Remove from heat and stir in the chopped green onion just before serving.
