- Jasmine rice - 1 cup (uncooked)
- Firm tofu - 200 grams, cubed
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Green peas - 1/2 cup (frozen or fresh)
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Gluten-free soy sauce - 3 tablespoons
- Sesame oil - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions. Once cooked, spread the rice on a baking sheet to cool.
- In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the pan and set aside.
- In the same pan, add the remaining vegetable oil and heat it. Sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the diced carrot and bell pepper to the pan, and cook for 3-4 minutes until they begin to soften.
- Stir in the green peas and continue to cook for an additional 2 minutes.
- Add the cooled jasmine rice to the pan, and mix well with the vegetables. Pour in the gluten-free soy sauce and sesame oil, stirring to combine evenly.
- Add the crispy tofu back into the pan, and mix gently to incorporate. Season with salt and black pepper to taste.
- Remove from heat and stir in the chopped green onion just before serving.
