Ingredients

  • Firm tofu - 300 grams
  • Fresh spinach - 200 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions - 2, chopped (for garnish)

Steps

  1. Press the tofu for 15 minutes to remove excess water, then cut it into 1-inch cubes.
  2. In a bowl, toss the tofu cubes with cornstarch, salt, and black pepper until evenly coated.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat.
  4. Add the tofu cubes to the skillet and fry for about 5-7 minutes, turning occasionally, until they are golden brown and crispy. Remove them from the skillet and set aside.
  5. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  6. Add the spinach to the skillet and stir-fry for 2-3 minutes until wilted.
  7. Return the crispy tofu to the skillet and pour in the soy sauce and sesame oil. Stir well to combine and heat through for about 2 minutes.
  8. Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with chopped spring onions.
