- Firm tofu - 300 grams
- Fresh spinach - 200 grams
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Spring onions - 2, chopped (for garnish)
Steps
- Press the tofu for 15 minutes to remove excess water, then cut it into 1-inch cubes.
- In a bowl, toss the tofu cubes with cornstarch, salt, and black pepper until evenly coated.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium-high heat.
- Add the tofu cubes to the skillet and fry for about 5-7 minutes, turning occasionally, until they are golden brown and crispy. Remove them from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Add the spinach to the skillet and stir-fry for 2-3 minutes until wilted.
- Return the crispy tofu to the skillet and pour in the soy sauce and sesame oil. Stir well to combine and heat through for about 2 minutes.
- Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with chopped spring onions.
