Ingredients

  • Taro root - 250 grams
  • Vegetable oil - 500 ml (for frying)
  • Sea salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon (optional for heat)

Steps

  1. Peel the taro root and slice it thinly using a mandoline or sharp knife, aiming for about 1-2 mm thickness.
  2. Soak the taro slices in cold water for about 10 minutes to remove excess starch.
  3. Drain and pat the taro slices dry with a clean kitchen towel.
  4. Heat the vegetable oil in a deep pot or fryer to about 180°C (350°F).
  5. Carefully add a handful of taro slices to the hot oil, ensuring not to overcrowd the pot.
  6. Fry the taro slices for about 3-5 minutes or until they turn golden brown and crispy, stirring occasionally.
  7. Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. While still hot, season the chips with sea salt, black pepper, garlic powder, and cayenne pepper if desired.
  9. Repeat the frying process with the remaining taro slices.
  10. Allow the chips to cool slightly before serving.
