- Taro root - 250 grams
- Vegetable oil - 500 ml (for frying)
- Sea salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon (optional for heat)
Steps
- Peel the taro root and slice it thinly using a mandoline or sharp knife, aiming for about 1-2 mm thickness.
- Soak the taro slices in cold water for about 10 minutes to remove excess starch.
- Drain and pat the taro slices dry with a clean kitchen towel.
- Heat the vegetable oil in a deep pot or fryer to about 180°C (350°F).
- Carefully add a handful of taro slices to the hot oil, ensuring not to overcrowd the pot.
- Fry the taro slices for about 3-5 minutes or until they turn golden brown and crispy, stirring occasionally.
- Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
- While still hot, season the chips with sea salt, black pepper, garlic powder, and cayenne pepper if desired.
- Repeat the frying process with the remaining taro slices.
- Allow the chips to cool slightly before serving.
