Ingredients

  • Sweet potato - 400 grams
  • Cornstarch - 50 grams
  • Vegetable oil - 100 ml (for frying)
  • Garlic - 3 cloves (minced)
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Green onions - 2 (sliced for garnish)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Peel the sweet potatoes and cut them into thin slices, about 0.5 cm thick.
  2. In a bowl, toss the sweet potato slices with cornstarch until evenly coated.
  3. Heat the vegetable oil in a frying pan over medium-high heat.
  4. Once the oil is hot, add the sweet potato slices in batches, frying until they are golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  5. In a small bowl, combine the minced garlic, soy sauce, rice vinegar, honey, and a pinch of salt and pepper to create the glaze.
  6. In the same pan, pour out excess oil, leaving about 1 tablespoon. Add the garlic-soy glaze and let it simmer for 1 minute.
  7. Add the fried sweet potato slices to the pan, tossing gently to coat them in the glaze.
  8. Remove from heat, sprinkle with sesame seeds and sliced green onions before serving.
