Steps

  1. In a large mixing bowl, combine the carrot, red bell pepper, zucchini, mushrooms, cabbage, green onion, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Mix well and let it sit for 10 minutes to allow the flavors to meld.
  2. Prepare a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable, then lay it flat on a clean surface.
  3. Place about 2 tablespoons of the vegetable filling onto the lower third of the rice paper wrapper. Fold the sides over the filling and roll it up tightly from the bottom to the top, sealing the edges. Repeat this process for the remaining wrappers and filling.
  4. In a deep skillet or frying pan, heat vegetable oil over medium heat until hot. Carefully add the spring rolls to the oil in batches, frying for 3-4 minutes on each side until they are golden brown and crispy.
  5. Once cooked, remove the spring rolls and place them on paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
