Ingredients

  • Spring roll wrappers - 4 pieces
  • Cabbage - 100 grams, finely shredded
  • Carrot - 50 grams, grated
  • Bell pepper - 50 grams, finely chopped
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 2 teaspoons, for brushing

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, combine the shredded cabbage, grated carrot, chopped bell pepper, green onions, minced garlic, and grated ginger.
  3. Add the soy sauce, sesame oil, black pepper, and salt to the vegetable mixture. Mix well until all ingredients are evenly coated.
  4. Take a spring roll wrapper and place about 2 tablespoons of the vegetable mixture on the lower third of the wrapper.
  5. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom. Seal the edge with a little water.
  6. Repeat the process with the remaining wrappers and filling.
  7. Place the filled spring rolls on a baking sheet lined with parchment paper.
  8. Brush the tops of the rolls with olive oil to help them crisp up during baking.
  9. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy, turning halfway through for even baking.
  10. Remove from the oven and let cool slightly before serving.
