- Spring roll wrappers - 4 pieces
- Cabbage - 100 grams, finely shredded
- Carrot - 50 grams, grated
- Bell pepper - 50 grams, finely chopped
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 2 teaspoons, for brushing
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the shredded cabbage, grated carrot, chopped bell pepper, green onions, minced garlic, and grated ginger.
- Add the soy sauce, sesame oil, black pepper, and salt to the vegetable mixture. Mix well until all ingredients are evenly coated.
- Take a spring roll wrapper and place about 2 tablespoons of the vegetable mixture on the lower third of the wrapper.
- Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom. Seal the edge with a little water.
- Repeat the process with the remaining wrappers and filling.
- Place the filled spring rolls on a baking sheet lined with parchment paper.
- Brush the tops of the rolls with olive oil to help them crisp up during baking.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy, turning halfway through for even baking.
- Remove from the oven and let cool slightly before serving.
