Ingredients

  • Rice flour - 100 grams
  • Cornstarch - 50 grams
  • Cold sparkling water - 150 ml
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oil (for frying) - 500 ml

Steps

  1. In a medium bowl, combine rice flour, cornstarch, salt, and black pepper.
  2. In a separate bowl, beat the egg and then mix it with the cold sparkling water.
  3. Gradually add the egg mixture to the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
  4. Heat the oil in a deep pan or wok over medium-high heat until it reaches 180°C (350°F).
  5. Dip each shrimp into the batter, allowing excess to drip off, and carefully place them in the hot oil.
  6. Fry the shrimp in batches for about 2-3 minutes or until golden brown and crispy.
