- Cold sparkling water - 150 ml
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oil (for frying) - 500 ml
Steps
- In a medium bowl, combine rice flour, cornstarch, salt, and black pepper.
- In a separate bowl, beat the egg and then mix it with the cold sparkling water.
- Gradually add the egg mixture to the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
- Heat the oil in a deep pan or wok over medium-high heat until it reaches 180°C (350°F).
