Ingredients

  • Shrimp (peeled and deveined) - 250 grams
  • Cornstarch - 50 grams
  • Egg - 1 large
  • Panko breadcrumbs - 100 grams
  • Mixed salad greens - 100 grams
  • Cucumber (thinly sliced) - 100 grams
  • Carrot (julienned) - 50 grams
  • Red bell pepper (sliced) - 50 grams
  • Green onions (sliced) - 2 stalks
  • Sesame oil - 1 tablespoon
  • Soy sauce (low sodium) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Oil (for frying) - as needed

Steps

  1. In a bowl, whisk the egg and season with salt and pepper.
  2. Place the cornstarch and panko breadcrumbs in separate shallow dishes.
  3. Dip each shrimp into the cornstarch, then into the egg, and finally coat with panko breadcrumbs.
  4. Heat oil in a frying pan over medium-high heat. Once hot, fry the shrimp in batches until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
  5. In a large bowl, combine mixed salad greens, cucumber, carrot, red bell pepper, and green onions.
  6. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and a pinch of salt and pepper to create the dressing.
  7. Toss the salad with the dressing until well coated.
  8. Serve the crispy shrimp on top of the salad and enjoy!
