Ingredients

  • Cornstarch - 100 grams
  • All-purpose flour - 50 grams
  • Garlic powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sea salt - 1 teaspoon
  • Water - 150 ml
  • Vegetable oil (for frying) - 500 ml
  • Chili flakes (optional) - 1/2 teaspoon
  • Lemon wedges (for serving) - 2 wedges

Steps

  1. Begin by cleaning the squid, removing the skin and innards, then slice the squid bodies into rings and the tentacles into bite-sized pieces.
  2. In a mixing bowl, combine cornstarch, all-purpose flour, garlic powder, black pepper, sea salt, and chili flakes (if using). Mix well.
  3. Gradually add water to the dry ingredients, stirring until you achieve a smooth batter consistency.
  4. Heat the vegetable oil in a deep frying pan or wok over medium-high heat until it reaches 180°C (350°F).
  5. Dip the squid pieces into the batter, allowing excess to drip off, then carefully place them in the hot oil in small batches.
  6. Fry the squid for about 2-3 minutes or until they turn golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
