Ingredients

  • Squid (cleaned and sliced) - 300 grams
  • Cornflour - 50 grams
  • Rice flour - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • White pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil (for frying) - 500 ml
  • Spring onions (chopped) - 2 tablespoons
  • Lemon wedges (for serving) - 2

Steps

  1. In a mixing bowl, combine the cornflour, rice flour, salt, black pepper, white pepper, garlic powder, and chili flakes.
  2. Toss the cleaned and sliced squid in the flour mixture until evenly coated.
  3. Heat the vegetable oil in a deep pan or wok over medium-high heat until hot (about 180°C/350°F).
  4. Carefully add the coated squid in batches to the hot oil, frying for about 2-3 minutes or until golden brown and crispy.
  5. Remove the squid from the oil using a slotted spoon and drain on paper towels.
  6. In a large bowl, toss the crispy squid with sesame oil and chopped spring onions.
  7. Serve immediately with lemon wedges on the side.
