Ingredients
- Rice paper - 8 sheets
- Cooked shrimp - 150 grams, chopped
- Carrot - 1 medium, julienned
- Cucumber - 1 small, julienned
- Red bell pepper - 1 small, julienned
- Fresh cilantro - 20 grams, chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Cornstarch - 2 tablespoons
- Water - 1/4 cup
- Vegetable oil - for frying
Steps
- In a bowl, mix the cooked shrimp, carrot, cucumber, red bell pepper, cilantro, garlic, ginger, soy sauce, and sesame oil until well combined.
- Prepare a work surface and fill a shallow dish with warm water. Dip one rice paper sheet in the water for about 10 seconds until softened, then lay it flat on the work surface.
- Place 2 tablespoons of the filling mixture near the bottom edge of the rice paper, fold the sides over the filling, and then roll it up tightly from the bottom to the top. Repeat with remaining sheets and filling.
- In a small bowl, mix cornstarch with water to create a slurry. Brush the ends of each roll with the slurry to seal them.
- In a large skillet or deep frying pan, heat vegetable oil over medium-high heat. Once hot, carefully place the rolls in the oil and fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the rolls from the oil and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
