- Rice paper wrappers - 6 sheets
- Carrots - 100 grams, julienned
- Cucumber - 100 grams, julienned
- Red bell pepper - 100 grams, thinly sliced
- Fresh mint leaves - 20 grams
- Fresh cilantro - 20 grams
- Tofu (firm) - 150 grams, sliced into strips
- Cornstarch - 2 tablespoons
- Vegetable oil - for frying
- Soy sauce - 2 tablespoons
- Hoisin sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
Steps
- Prepare the vegetables: julienne the carrots and cucumber, and thinly slice the red bell pepper. Set aside.
- Slice the tofu into strips and pat dry with a paper towel to remove excess moisture.
- Coat the tofu strips lightly with cornstarch, ensuring an even layer.
- Heat vegetable oil in a frying pan over medium heat. Fry the tofu strips until golden brown and crispy on all sides, about 5-7 minutes. Remove and drain on paper towels.
- Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Lay it flat on a clean surface.
- Place a small amount of each vegetable (carrots, cucumber, red bell pepper), a few mint leaves, cilantro, and a piece of fried tofu in the center of the rice paper wrapper.
- Fold the sides of the rice paper over the filling, then roll from the bottom to enclose the filling tightly. Repeat with the remaining wrappers and filling.
- In a small bowl, mix soy sauce, hoisin sauce, and rice vinegar to create the dipping sauce.
- Serve the crispy rice paper rolls with the dipping sauce on the side.
