Ingredients

  • Rice paper wrappers - 6 sheets
  • Carrots - 100 grams, julienned
  • Cucumber - 100 grams, julienned
  • Red bell pepper - 100 grams, thinly sliced
  • Fresh mint leaves - 20 grams
  • Fresh cilantro - 20 grams
  • Tofu (firm) - 150 grams, sliced into strips
  • Cornstarch - 2 tablespoons
  • Vegetable oil - for frying
  • Soy sauce - 2 tablespoons
  • Hoisin sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon

Steps

  1. Prepare the vegetables: julienne the carrots and cucumber, and thinly slice the red bell pepper. Set aside.
  2. Slice the tofu into strips and pat dry with a paper towel to remove excess moisture.
  3. Coat the tofu strips lightly with cornstarch, ensuring an even layer.
  4. Heat vegetable oil in a frying pan over medium heat. Fry the tofu strips until golden brown and crispy on all sides, about 5-7 minutes. Remove and drain on paper towels.
  5. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Lay it flat on a clean surface.
  6. Place a small amount of each vegetable (carrots, cucumber, red bell pepper), a few mint leaves, cilantro, and a piece of fried tofu in the center of the rice paper wrapper.
  7. Fold the sides of the rice paper over the filling, then roll from the bottom to enclose the filling tightly. Repeat with the remaining wrappers and filling.
  8. In a small bowl, mix soy sauce, hoisin sauce, and rice vinegar to create the dipping sauce.
  9. Serve the crispy rice paper rolls with the dipping sauce on the side.
