- Cooked jasmine rice - 1 cup
- Chopped green onions - 2 tablespoons
- Grated carrot - 1/4 cup
- Cornstarch - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- In a large bowl, combine the cooked jasmine rice, chopped green onions, grated carrot, cornstarch, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.
- Divide the rice mixture into 4 equal portions and shape each into a patty, about 1 cm thick.
- Heat a non-stick skillet over medium heat and add enough vegetable oil to cover the bottom of the skillet.
- Once the oil is hot, carefully place the rice patties in the skillet. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel to drain excess oil.
- Serve warm with a side of soy sauce or sweet chili sauce for dipping.
