Ingredients

  • Cooked jasmine rice - 1 cup
  • Chopped green onions - 2 tablespoons
  • Grated carrot - 1/4 cup
  • Cornstarch - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a large bowl, combine the cooked jasmine rice, chopped green onions, grated carrot, cornstarch, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.
  2. Divide the rice mixture into 4 equal portions and shape each into a patty, about 1 cm thick.
  3. Heat a non-stick skillet over medium heat and add enough vegetable oil to cover the bottom of the skillet.
  4. Once the oil is hot, carefully place the rice patties in the skillet. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy.
  5. Remove the patties from the skillet and place them on a paper towel to drain excess oil.
  6. Serve warm with a side of soy sauce or sweet chili sauce for dipping.
