Ingredients

  • Cooked jasmine rice - 300 grams
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 4 tablespoons
  • Bell pepper (red) - 1/2, diced
  • Carrot - 1 medium, grated
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Mozzarella cheese - 100 grams, shredded
  • Fresh cilantro - 2 tablespoons, chopped
  • Black sesame seeds - 1 tablespoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a large bowl, combine the cooked jasmine rice, cornstarch, salt, and black pepper until well mixed.
  3. Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat. Add the rice mixture and press it down evenly to form a crust. Cook for about 8-10 minutes until the bottom is crispy and golden.
  4. Carefully flip the rice crust using a large plate, add the remaining vegetable oil around the edges, and cook for another 5-7 minutes until the other side is crispy.
  5. In a separate bowl, mix the diced bell pepper, grated carrot, chopped green onion, minced garlic, soy sauce, and sesame oil. Stir until well combined.
  6. Once the rice crust is crispy, spread the vegetable mixture evenly on top of the rice, then sprinkle the shredded mozzarella cheese over the vegetables.
  7. Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and garnish with chopped cilantro and black sesame seeds if using. Slice and serve hot.
