- Cooked jasmine rice - 300 grams
- Cornstarch - 2 tablespoons
- Vegetable oil - 4 tablespoons
- Bell pepper (red) - 1/2, diced
- Carrot - 1 medium, grated
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 teaspoon
- Mozzarella cheese - 100 grams, shredded
- Fresh cilantro - 2 tablespoons, chopped
- Black sesame seeds - 1 tablespoon (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- In a large bowl, combine the cooked jasmine rice, cornstarch, salt, and black pepper until well mixed.
- Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat. Add the rice mixture and press it down evenly to form a crust. Cook for about 8-10 minutes until the bottom is crispy and golden.
- Carefully flip the rice crust using a large plate, add the remaining vegetable oil around the edges, and cook for another 5-7 minutes until the other side is crispy.
- In a separate bowl, mix the diced bell pepper, grated carrot, chopped green onion, minced garlic, soy sauce, and sesame oil. Stir until well combined.
- Once the rice crust is crispy, spread the vegetable mixture evenly on top of the rice, then sprinkle the shredded mozzarella cheese over the vegetables.
- Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped cilantro and black sesame seeds if using. Slice and serve hot.
