  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Carrot - 1 medium (diced)
  • Green bell pepper - 1 medium (diced)
  • Green onions - 2 (sliced)
  • Soy sauce - 2 tablespoons (ensure it's kosher)
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  2. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  3. Add the diced carrot and green bell pepper to the skillet, cooking for about 3-4 minutes until they start to soften.
  4. Stir in the chilled jasmine rice, breaking up any clumps, and cook for about 5 minutes, allowing it to crisp up slightly at the bottom.
  5. Drizzle the soy sauce and sesame oil over the rice, stirring well to combine all ingredients, and season with salt and black pepper to taste.
  6. Continue to cook for an additional 3-4 minutes, allowing the rice to crisp up further, stirring occasionally.
  7. Once the rice is crispy and golden brown, remove from heat and sprinkle with sliced green onions and sesame seeds before serving.
