Ingredients

  • Pork belly - 250 grams
  • Salt - 1 teaspoon
  • Five-spice powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Vegetable oil - for frying (approximately 200 ml)

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
  3. In a bowl, mix salt, five-spice powder, black pepper, and garlic powder. Rub this mixture all over the pork belly, focusing on the scored skin.
  4. Place the pork belly on a wire rack over a baking tray and roast in the preheated oven for 30 minutes, allowing the fat to render.
  5. Remove the pork from the oven and let it cool for about 10 minutes. Then, cut the pork into bite-sized pieces.
  6. Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the pork pieces, skin side down, and fry until golden brown and crispy, about 5-7 minutes.
  7. Remove the cracklings from the oil and drain on paper towels. Let them cool slightly before serving.
