- Pork belly - 250 grams
- Salt - 1 teaspoon
- Five-spice powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Vegetable oil - for frying (approximately 200 ml)
Steps
- Preheat your oven to 200°C (390°F).
- Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
- In a bowl, mix salt, five-spice powder, black pepper, and garlic powder. Rub this mixture all over the pork belly, focusing on the scored skin.
- Place the pork belly on a wire rack over a baking tray and roast in the preheated oven for 30 minutes, allowing the fat to render.
- Remove the pork from the oven and let it cool for about 10 minutes. Then, cut the pork into bite-sized pieces.
- Heat vegetable oil in a deep frying pan over medium-high heat. Once hot, carefully add the pork pieces, skin side down, and fry until golden brown and crispy, about 5-7 minutes.
- Remove the cracklings from the oil and drain on paper towels. Let them cool slightly before serving.
