Ingredients

  • Pork belly - 500 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Five-spice powder - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Water - 250 milliliters
  • Spring onions - 2 (for garnish)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat.
  3. In a small bowl, mix together salt, black pepper, five-spice powder, and garlic powder. Rub this mixture all over the pork belly, particularly into the scored skin.
  4. In a separate bowl, combine the soy sauce and rice vinegar. Drizzle this mixture over the pork belly, ensuring it is well coated.
  5. Place the pork belly in a shallow dish and pour the water around it (not over the skin). Cover the dish with foil and marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  6. Remove the pork belly from the marinade and pat the skin dry with paper towels. This helps to achieve crispiness.
  7. Place the pork belly on a roasting rack in a baking tray, skin side up, and roast in the preheated oven for 30 minutes.
  8. Reduce the oven temperature to 180°C (356°F) and continue roasting for another 30 minutes until the skin is crispy and the meat is tender.
  9. Once done, remove from the oven and let it rest for 10 minutes before slicing.
  10. Serve garnished with chopped spring onions.
