- Pork belly - 500 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Five-spice powder - 1 teaspoon
- Garlic powder - 1 teaspoon
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Water - 250 milliliters
- Spring onions - 2 (for garnish)
Steps
- Preheat the oven to 220°C (428°F).
- Score the skin of the pork belly in a crisscross pattern, being careful not to cut into the meat.
- In a small bowl, mix together salt, black pepper, five-spice powder, and garlic powder. Rub this mixture all over the pork belly, particularly into the scored skin.
- In a separate bowl, combine the soy sauce and rice vinegar. Drizzle this mixture over the pork belly, ensuring it is well coated.
- Place the pork belly in a shallow dish and pour the water around it (not over the skin). Cover the dish with foil and marinate in the refrigerator for at least 30 minutes or up to 2 hours.
- Remove the pork belly from the marinade and pat the skin dry with paper towels. This helps to achieve crispiness.
- Place the pork belly on a roasting rack in a baking tray, skin side up, and roast in the preheated oven for 30 minutes.
- Reduce the oven temperature to 180°C (356°F) and continue roasting for another 30 minutes until the skin is crispy and the meat is tender.
- Once done, remove from the oven and let it rest for 10 minutes before slicing.
- Serve garnished with chopped spring onions.
