- Nori sheets - 4
- Cauliflower rice - 1 cup
- Carrot - 1 medium, grated
- Cucumber - 1 small, julienned
- Avocado - 1 medium, sliced
- Sesame oil - 1 tablespoon
- Coconut aminos - 2 tablespoons
- Sea salt - to taste
- Black sesame seeds - 1 tablespoon
Steps
- Prepare the cauliflower rice by pulsing cauliflower florets in a food processor until it resembles rice.
- In a skillet, heat sesame oil over medium heat and add cauliflower rice, cooking for about 5-7 minutes until tender.
- Add grated carrot, julienned cucumber, and a pinch of sea salt to the skillet, mixing well for another 2-3 minutes.
- Remove from heat and let the mixture cool slightly before assembling the rolls.
- Lay a nori sheet shiny side down on a bamboo sushi mat or a flat surface.
- Spoon a portion of the cauliflower mixture onto the bottom third of the nori sheet, leaving a small border.
- Top the mixture with a few slices of avocado and sprinkle with black sesame seeds.
- Carefully roll the nori away from you, tucking it tightly as you go to form a cylinder. Wet the edge of the nori with water to seal.
- Repeat the process for the remaining nori sheets and filling.
- Slice the rolls into bite-sized pieces with a sharp knife and serve with coconut aminos for dipping.
