Ingredients

  • Egg noodles - 200 grams
  • Firm tofu - 150 grams, cubed
  • Broccoli florets - 100 grams
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Snow peas - 100 grams
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Cornstarch - 2 tablespoons
  • Vegetable oil - for frying
  • Salt - to taste

Steps

  1. Cook the egg noodles according to package instructions, drain, and set aside.
  2. In a bowl, toss the cubed tofu with cornstarch until well coated.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the tofu and fry until golden and crispy, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add a tablespoon of sesame oil. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  5. Add the broccoli, bell pepper, carrot, and snow peas to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
  6. Add the cooked noodles and crispy tofu back to the skillet. Pour in the soy sauce and toss everything together until well combined and heated through, about 2 minutes.
