- Egg noodles - 200 grams
- Firm tofu - 150 grams, cubed
- Broccoli florets - 100 grams
- Bell pepper (red or yellow) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Snow peas - 100 grams
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Cornstarch - 2 tablespoons
- Vegetable oil - for frying
- Salt - to taste
Steps
- Cook the egg noodles according to package instructions, drain, and set aside.
- In a bowl, toss the cubed tofu with cornstarch until well coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the tofu and fry until golden and crispy, about 5-7 minutes. Remove and set aside.
- In the same skillet, add a tablespoon of sesame oil. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add the broccoli, bell pepper, carrot, and snow peas to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
- Add the cooked noodles and crispy tofu back to the skillet. Pour in the soy sauce and toss everything together until well combined and heated through, about 2 minutes.
- Serve hot, garnished with chopped green onions and a sprinkle of salt if desired.
