Ingredients

  • Egg noodles - 200 grams
  • Vegetable oil - 100 ml
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Snow peas - 100 grams, trimmed
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 30 ml
  • Sesame oil - 5 ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the egg noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  3. Add the cooked egg noodles to the skillet, spreading them out evenly, and allow them to fry for about 5-7 minutes until golden and crispy, flipping occasionally.
  4. Remove the crispy noodles from the skillet and drain on paper towels to absorb excess oil.
  5. In the same skillet, add a splash more oil if needed and sauté the garlic for 30 seconds until fragrant.
  6. Add the julienned carrot, sliced bell pepper, and snow peas to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.
  7. Pour in the soy sauce and sesame oil, tossing the vegetables to coat evenly, and season with salt and black pepper to taste.
  8. Serve the crispy noodles topped with the stir-fried vegetables and garnish with chopped green onions.
