- Egg noodles - 200 grams

- Soy sauce - 30 ml
- Sesame oil - 5 ml

Steps
- Cook the egg noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
- Add the cooked egg noodles to the skillet, spreading them out evenly, and allow them to fry for about 5-7 minutes until golden and crispy, flipping occasionally.
- Remove the crispy noodles from the skillet and drain on paper towels to absorb excess oil.
- In the same skillet, add a splash more oil if needed and sauté the garlic for 30 seconds until fragrant.
- Add the julienned carrot, sliced bell pepper, and snow peas to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.
- Pour in the soy sauce and sesame oil, tossing the vegetables to coat evenly, and season with salt and black pepper to taste.
- Serve the crispy noodles topped with the stir-fried vegetables and garnish with chopped green onions.
