  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Peanuts - 30 grams, crushed (optional)
  • Lettuce leaves - for serving

Steps

  1. Cook the egg noodles according to package instructions until al dente, then drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the cucumber, carrot, red bell pepper, green onion, and cilantro.
  3. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, salt, and pepper to create the dressing.
