Ingredients

  • Lotus root - 200 grams
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1/2, thinly sliced
  • Cilantro - 2 tablespoons, chopped
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black sesame seeds - 1 teaspoon (for garnish)
  • Chili flakes - optional, for garnish

Steps

  1. Start by preparing the lotus root: peel the lotus root and slice it into thin rounds, about 3-5 mm thick.
  2. Fill a pot with water and add a pinch of salt. Bring it to a boil and add the sliced lotus root. Blanch for 3-5 minutes until slightly tender but still crunchy. Drain and immediately transfer to a bowl of ice water to stop the cooking process.
  3. Once the lotus root is cool, drain again and pat dry with a kitchen towel.
  4. In a large mixing bowl, combine the blanched lotus root, julienned carrot, cucumber, red bell pepper, and chopped cilantro.
  5. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce, honey, and salt to create the dressing.
  6. Pour the dressing over the salad ingredients and toss gently to combine, ensuring everything is evenly coated.
  7. Let the salad sit for about 5 minutes to allow the flavors to meld.
  8. Serve chilled or at room temperature, garnished with black sesame seeds and chili flakes if desired.
