Steps
- Wash the lotus root thoroughly under running water to remove any dirt.
- Peel the lotus root using a vegetable peeler and slice it thinly (about 2-3 mm thick).
- Soak the lotus root slices in a bowl of cold water for 10 minutes to prevent browning and remove excess starch.
- Drain the slices and pat them dry with a clean kitchen towel or paper towels to remove moisture.
- Heat vegetable oil in a deep pan or wok over medium-high heat until hot (around 180°C or 350°F).
- Carefully add a few lotus root slices to the hot oil, making sure not to overcrowd the pan.
- Fry the slices for 3-4 minutes or until they turn golden brown and crispy, turning occasionally for even cooking.
