Steps

  1. Wash and slice the zucchini into 1/4 inch thick rounds.
  2. In a bowl, combine almond flour, tapioca starch, garlic powder, salt, and black pepper.
  3. In a separate bowl, beat the egg until well mixed.
  4. Dip each zucchini slice into the egg, allowing excess to drip off, then coat it in the flour mixture, pressing lightly to ensure it adheres.
  5. Heat coconut oil in a large skillet over medium heat until shimmering.
  6. Carefully add the coated zucchini slices to the hot oil in a single layer, frying in batches if necessary.
