- Cold water - 100 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Ginger powder - 1/2 teaspoon
- Vegetable oil (for frying) - 500 ml
- Lemon wedges - for serving
- Fresh cilantro (for garnish) - a handful
Steps
- In a bowl, combine cornstarch, rice flour, salt, black pepper, garlic powder, and ginger powder.
- In another bowl, whisk the egg and cold water together until well combined.
- Dip the squid rings into the egg mixture, allowing excess to drip off, then dredge them in the flour mixture until well coated.
- Heat vegetable oil in a deep pan or wok over medium-high heat until it reaches about 180°C (356°F).
- Carefully add the coated squid rings to the hot oil in batches, frying for about 2-3 minutes or until golden and crispy.
- Using a slotted spoon, remove the fried squid and place them on paper towels to drain excess oil.
