Ingredients

  • Squid (cleaned and cut into rings) - 300 grams
  • Cornstarch - 50 grams
  • Rice flour - 50 grams
  • Egg - 1 large
  • Cold water - 100 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Ginger powder - 1/2 teaspoon
  • Vegetable oil (for frying) - 500 ml
  • Lemon wedges - for serving
  • Fresh cilantro (for garnish) - a handful

Steps

  1. In a bowl, combine cornstarch, rice flour, salt, black pepper, garlic powder, and ginger powder.
  2. In another bowl, whisk the egg and cold water together until well combined.
  3. Dip the squid rings into the egg mixture, allowing excess to drip off, then dredge them in the flour mixture until well coated.
  4. Heat vegetable oil in a deep pan or wok over medium-high heat until it reaches about 180°C (356°F).
  5. Carefully add the coated squid rings to the hot oil in batches, frying for about 2-3 minutes or until golden and crispy.
  6. Using a slotted spoon, remove the fried squid and place them on paper towels to drain excess oil.
  7. Serve hot, garnished with fresh cilantro and lemon wedges on the side.
