- Cornstarch - 2 tablespoons (30g)
- Baking powder - 1/2 teaspoon (2g)
- Sugar - 1 tablespoon (12g)
- Salt - 1/4 teaspoon (1g)
- Water - 1/2 cup (120ml), ice-cold
- Vegetable oil - for frying, about 2 cups (500ml)
Steps
- Peel the bananas and cut them in half lengthwise, then cut each half into 2-3 pieces, depending on preference.
- In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, sugar, and salt.
- Gradually add the ice-cold water to the dry ingredients, whisking until a smooth batter forms.
- Heat the vegetable oil in a deep skillet or wok over medium-high heat until it reaches 180°C (350°F).
- Dip each piece of banana into the batter, ensuring it is fully coated.
- Carefully place the battered bananas into the hot oil, frying in batches to avoid overcrowding.
- Fry for about 2-3 minutes on each side or until golden brown and crispy.
- Use a slotted spoon to remove the fried bananas and place them on a paper towel-lined plate to drain excess oil.
- Serve warm, optionally dusted with powdered sugar or drizzled with honey.
