Ingredients

  • Bananas - 2 medium, ripe but firm
  • All-purpose flour - 1/2 cup (60g)
  • Cornstarch - 2 tablespoons (30g)
  • Baking powder - 1/2 teaspoon (2g)
  • Sugar - 1 tablespoon (12g)
  • Salt - 1/4 teaspoon (1g)
  • Water - 1/2 cup (120ml), ice-cold
  • Vegetable oil - for frying, about 2 cups (500ml)

Steps

  1. Peel the bananas and cut them in half lengthwise, then cut each half into 2-3 pieces, depending on preference.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, sugar, and salt.
  3. Gradually add the ice-cold water to the dry ingredients, whisking until a smooth batter forms.
  4. Heat the vegetable oil in a deep skillet or wok over medium-high heat until it reaches 180°C (350°F).
  5. Dip each piece of banana into the batter, ensuring it is fully coated.
  6. Carefully place the battered bananas into the hot oil, frying in batches to avoid overcrowding.
  7. Fry for about 2-3 minutes on each side or until golden brown and crispy.
  8. Use a slotted spoon to remove the fried bananas and place them on a paper towel-lined plate to drain excess oil.
  9. Serve warm, optionally dusted with powdered sugar or drizzled with honey.
