Ingredients
- White fish fillets (such as tilapia or cod) - 300 grams
- All-purpose flour - 100 grams
- Cornstarch - 50 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 150 ml
- Vegetable oil (for frying) - 200 ml
- Sugar - 3 tablespoons
- Soy sauce (halal) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 teaspoon
- Green onions (sliced) - 2 tablespoons (for garnish)
Steps
- Rinse the fish fillets under cold water and pat them dry with paper towels. Cut the fish into bite-sized pieces.
- In a bowl, mix the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add water to form a smooth batter.
- Heat the vegetable oil in a deep pan or wok over medium-high heat until hot (about 180°C).
- Dip each piece of fish into the batter, allowing excess to drip off, and carefully place them into the hot oil. Fry in batches for about 3-4 minutes until golden brown and crispy. Remove and drain on paper towels.
- In a separate saucepan, combine sugar, soy sauce, rice vinegar, minced garlic, and grated ginger. Cook over low heat, stirring until the sugar dissolves and the sauce thickens slightly (about 3-5 minutes).
- To serve, place the crispy fish on a plate, drizzle the sweet sauce over the top, and garnish with sliced green onions.
