Ingredients
- White fish fillets (e.g., cod or tilapia) - 300 grams
- All-purpose flour - 50 grams
- Cornstarch - 30 grams
- Egg - 1 large
- Cold water - 100 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil (for frying) - 200 ml
- Garlic - 4 cloves (minced)
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Spring onions - 2 (chopped)
- Sesame oil - 1 teaspoon
Steps
- Rinse the fish fillets under cold water and pat them dry with paper towels. Cut them into bite-sized pieces.
- In a bowl, mix the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, whisk the egg and cold water together.
- Dip each piece of fish into the egg mixture, then coat it in the flour mixture, ensuring an even coverage.
- Heat vegetable oil in a deep skillet or wok over medium-high heat. Once hot, carefully add the coated fish pieces in batches and fry until golden and crispy, about 4-5 minutes. Remove and drain on paper towels.
- In a separate pan, heat 1 tablespoon of the frying oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
- Stir in the soy sauce, oyster sauce, sugar, and sesame oil. Let the sauce simmer for 1-2 minutes until slightly thickened.
- Add the crispy fish to the pan and gently toss to coat the fish in the garlic sauce.
- Serve hot, garnished with chopped spring onions.
