Ingredients

  • All-purpose flour - 50 grams
  • Cornstarch - 30 grams
  • Egg - 1 large
  • Water - 100 ml
  • Sesame oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Panko breadcrumbs - 100 grams
  • Vegetable oil (for frying) - 300 ml
  • Corn tortillas - 4 small
  • Cabbage (shredded) - 100 grams
  • Carrots (grated) - 50 grams
  • Cilantro (chopped) - 2 tablespoons
  • Lime - 1 (for juice)
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon

Steps

  1. In a bowl, mix the all-purpose flour, cornstarch, salt, and black pepper.
  2. In another bowl, beat the egg and add water and sesame oil, mixing well.
  3. Dip the fish fillets into the flour mixture, then the egg mixture, and finally coat them with panko breadcrumbs.
  4. In a pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated fish fillets and fry until golden brown and crispy, about 3-4 minutes per side.
  5. While the fish is frying, prepare the slaw by combining shredded cabbage, grated carrots, chopped cilantro, lime juice, soy sauce, rice vinegar, and honey in a bowl. Toss well and set aside.
  6. Once the fish is cooked, remove from oil and drain on paper towels.
  7. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
