- Brown rice - 150 grams
- Cornstarch - 60 grams
- Egg - 1 large
- Rice vinegar - 1 tablespoon
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, finely chopped
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Cabbage - 100 grams, shredded
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - for frying
Steps
- Rinse the brown rice under cold water until the water runs clear, then cook according to package instructions (typically about 30 minutes).
- While the rice is cooking, prepare the fish by patting it dry with paper towels, then season both sides with salt and black pepper.
- In a shallow bowl, beat the egg and add rice vinegar, mixing well.
- In another bowl, add cornstarch and season with a pinch of salt and black pepper.
- Dip each piece of fish into the egg mixture, then coat it thoroughly with cornstarch, shaking off any excess.
- Heat vegetable oil in a frying pan over medium heat until shimmering. Carefully place the coated fish in the hot oil.
- Fry the fish for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
- In the same pan, add a little more oil if needed and stir-fry the bell pepper, carrot, and cabbage for about 3-4 minutes until tender but still crisp.
- Add the cooked rice to the vegetables in the pan, drizzle with soy sauce and sesame oil, and toss everything together until evenly mixed and heated through.
- Serve the rice and vegetable mixture in bowls, topped with the crispy fish and garnished with chopped green onions.
