Ingredients

  • White fish fillets (e.g., cod or tilapia) - 300 grams
  • Brown rice - 150 grams
  • Cornstarch - 60 grams
  • Egg - 1 large
  • Rice vinegar - 1 tablespoon
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, finely chopped
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Cabbage - 100 grams, shredded
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - for frying

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then cook according to package instructions (typically about 30 minutes).
  2. While the rice is cooking, prepare the fish by patting it dry with paper towels, then season both sides with salt and black pepper.
  3. In a shallow bowl, beat the egg and add rice vinegar, mixing well.
  4. In another bowl, add cornstarch and season with a pinch of salt and black pepper.
  5. Dip each piece of fish into the egg mixture, then coat it thoroughly with cornstarch, shaking off any excess.
  6. Heat vegetable oil in a frying pan over medium heat until shimmering. Carefully place the coated fish in the hot oil.
  7. Fry the fish for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  8. In the same pan, add a little more oil if needed and stir-fry the bell pepper, carrot, and cabbage for about 3-4 minutes until tender but still crisp.
  9. Add the cooked rice to the vegetables in the pan, drizzle with soy sauce and sesame oil, and toss everything together until evenly mixed and heated through.
  10. Serve the rice and vegetable mixture in bowls, topped with the crispy fish and garnished with chopped green onions.
