Ingredients
- White fish fillets (e.g., cod or tilapia) - 300 grams
- Rice flour - 50 grams
- Cornstarch - 25 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Egg - 1, beaten
- Vegetable oil - 200 ml (for frying)
- Jasmine rice - 150 grams
- Water - 300 ml
- Green onions - 2, chopped
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 teaspoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine it with 300 ml of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
- While the rice is cooking, prepare the fish. In a bowl, mix the rice flour, cornstarch, salt, black pepper, and garlic powder.
- Dip each fish fillet into the beaten egg, then coat it in the flour mixture, ensuring an even layer.
- Heat the vegetable oil in a frying pan over medium-high heat. Once hot, carefully add the coated fish fillets and fry for about 3-4 minutes on each side until golden brown and crispy.
- Remove the fish from the pan and place it on a plate lined with paper towels to drain excess oil.
- Once the rice is cooked, fluff it with a fork and stir in the chopped green onions, soy sauce, and sesame oil.
- Serve the crispy fish on top of the jasmine rice, garnishing with additional green onions if desired.
