  • Egg - 1 large
  • Cold water - 150 ml
  • Vegetable oil - for frying
  • Lemon wedges - for serving

Steps

  1. Peel the potatoes and cut them into thick fries. Soak them in cold water for 30 minutes to remove excess starch, then drain and pat dry.
  2. In a bowl, mix together the cornstarch, all-purpose flour, baking powder, salt, and black pepper.
  3. In a separate bowl, whisk the egg and add the cold water, then combine with the dry ingredients to create a batter. The batter should be thick but pourable.
  4. Heat vegetable oil in a deep pan over medium-high heat. The oil should be around 180°C (350°F) for frying.
  5. While the oil heats up, dip the fish fillets into the batter, ensuring they are fully coated.
  6. Carefully place the battered fish into the hot oil and fry for about 5-7 minutes, or until golden brown and crispy. Remove and drain on paper towels.
  7. For the fries, fry the soaked potatoes in the same oil for about 5-6 minutes until golden and crispy. Remove and drain on paper towels, seasoning with salt immediately.
