Ingredients
- White fish fillets (e.g., cod or haddock) - 300 grams
- Potatoes - 2 medium (about 300 grams)
- Cornstarch - 50 grams
- All-purpose flour - 100 grams
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Egg - 1 large
- Cold water - 150 ml
- Vegetable oil - for frying
- Lemon wedges - for serving
- Tartar sauce - for serving
Steps
- Peel the potatoes and cut them into thick fries. Soak them in cold water for 30 minutes to remove excess starch, then drain and pat dry.
- In a bowl, mix together the cornstarch, all-purpose flour, baking powder, salt, and black pepper.
- In a separate bowl, whisk the egg and add the cold water, then combine with the dry ingredients to create a batter. The batter should be thick but pourable.
- Heat vegetable oil in a deep pan over medium-high heat. The oil should be around 180°C (350°F) for frying.
- While the oil heats up, dip the fish fillets into the batter, ensuring they are fully coated.
- Carefully place the battered fish into the hot oil and fry for about 5-7 minutes, or until golden brown and crispy. Remove and drain on paper towels.
- For the fries, fry the soaked potatoes in the same oil for about 5-6 minutes until golden and crispy. Remove and drain on paper towels, seasoning with salt immediately.
- Serve the crispy fish with the hot fries, lemon wedges, and tartar sauce on the side.
