- Almond flour - 100g
- Garlic powder - 1 tsp
- Onion powder - 1 tsp
- Sea salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Coconut oil - 50g (for frying)

Steps
- Preheat a frying pan over medium heat and add the coconut oil.
- Slice the eggplant into 1/2 cm thick rounds and set aside.
- In a shallow bowl, combine almond flour, garlic powder, onion powder, sea salt, and black pepper.
- Dredge each eggplant slice in the almond flour mixture, ensuring they are well coated on both sides.
- Once the oil is hot, carefully place the coated eggplant slices in the pan, cooking in batches if necessary to avoid overcrowding.
- Fry each slice for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the crispy eggplant slices from the pan and place them on a paper towel-lined plate to absorb excess oil.
- Garnish with fresh parsley and serve immediately with your choice of dipping sauce.
