Ingredients

  • Black pepper - 1/4 tsp
  • Coconut oil - 50g (for frying)
  • Fresh parsley - 1 tbsp (for garnish)

Steps

  1. Preheat a frying pan over medium heat and add the coconut oil.
  2. Slice the eggplant into 1/2 cm thick rounds and set aside.
  3. In a shallow bowl, combine almond flour, garlic powder, onion powder, sea salt, and black pepper.
  4. Dredge each eggplant slice in the almond flour mixture, ensuring they are well coated on both sides.
  5. Once the oil is hot, carefully place the coated eggplant slices in the pan, cooking in batches if necessary to avoid overcrowding.
  6. Fry each slice for about 3-4 minutes on each side, or until golden brown and crispy.
