- Vegan mozzarella cheese - 100g
- Red bell pepper - 1 small, diced
- Green onions - 2, chopped

Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant into 1cm thick rounds and sprinkle with salt. Let sit for 10 minutes to draw out moisture.
