Ingredients

  • Eggplant - 1 medium (approximately 250g)
  • Cornstarch - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Tomato sauce - 100g
  • Vegan mozzarella cheese - 100g
  • Red bell pepper - 1 small, diced
  • Green onions - 2, chopped
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1cm thick rounds and sprinkle with salt. Let sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  4. In a bowl, mix the cornstarch, olive oil, soy sauce, minced garlic, salt, and black pepper.
  5. Coat each eggplant slice with the cornstarch mixture and place them on a baking sheet lined with parchment paper.
  6. Bake the eggplant slices in the preheated oven for 15 minutes until crispy and golden brown, flipping halfway through.
  7. Remove the eggplant from the oven and spread a layer of tomato sauce on each slice.
  8. Top with vegan mozzarella cheese, diced red bell pepper, and chopped green onions.
  9. Return the eggplant pizzas to the oven and bake for an additional 5-7 minutes until the cheese is melted.
  10. Garnish with fresh basil before serving.
