  • Paprika - 1/2 teaspoon

  • Vegan burger buns - 2
  • Lettuce - 2 leaves
  • Cucumber - 1/2, thinly sliced
  • Vegan mayonnaise - 2 tablespoons
  • Sriracha or chili sauce - to taste

Steps

  1. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture, then rinse and pat dry.
  2. In a bowl, mix cornstarch, all-purpose flour, black pepper, garlic powder, and paprika. Gradually add water to create a smooth batter.
  3. Dip each eggplant slice into the batter, ensuring it is well-coated.
