  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Spring onions - 2 (sliced for garnish)
  • Sesame oil - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. Season both sides with salt, black pepper, and Chinese five-spice powder.
  3. Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium and cook for about 6-8 minutes until the fat renders and the skin becomes crispy.
  4. Flip the duck breasts and sear for another 2-3 minutes, then transfer the skillet to the preheated oven. Roast for about 15-20 minutes until the duck is cooked to your preferred doneness (medium rare is about 55°C or 130°F internal temperature).
  5. While the duck is roasting, prepare the plum sauce by combining plum sauce, soy sauce, rice vinegar, minced garlic, and grated ginger in a small saucepan over medium heat. Stir and simmer for 5-7 minutes until slightly thickened.
  6. Once the duck is done, remove it from the oven and let it rest for 5 minutes before slicing.
  7. Slice the duck breasts and serve with the warm plum sauce drizzled over the top. Garnish with sliced spring onions and a drizzle of sesame oil.
