Ingredients

  • Duck leg quarters - 2

  • Hoisin sauce - 30 ml
  • Five-spice powder - 1 tsp
  • Honey - 1 tbsp
  • Rice vinegar - 1 tbsp
  • Cucumber - 1, julienned
  • Spring onions - 2, sliced
  • Peking pancakes - 4
  • Sesame oil - 1 tsp
  • Salt - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix soy sauce, hoisin sauce, five-spice powder, honey, rice vinegar, and a pinch of salt to create a marinade.
  3. Place the duck leg quarters in a large resealable bag or a shallow dish and pour the marinade over the duck, ensuring it is well coated. Marinate for at least 1 hour, preferably overnight in the refrigerator.
  4. Remove the duck from the marinade and place it skin-side up on a roasting rack over a baking tray to catch drippings. Reserve the marinade for later.
  5. Roast the duck in the preheated oven for 1 hour, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
  6. While the duck is roasting, prepare the Peking pancakes according to package instructions (usually steaming or warming them).
  7. Once the duck is done, remove it from the oven and let it rest for 10 minutes before carving the meat off the bone.
  8. To serve, place a few pieces of duck on a pancake, add julienned cucumber and spring onions, drizzle with some reserved marinade, and roll up the pancake.
