- Duck leg quarters - 2
- Soy sauce (halal) - 60 ml
- Hoisin sauce - 30 ml
- Five-spice powder - 1 tsp
- Honey - 1 tbsp
- Rice vinegar - 1 tbsp
- Cucumber - 1, julienned
- Spring onions - 2, sliced
- Peking pancakes - 4
- Sesame oil - 1 tsp
- Salt - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix soy sauce, hoisin sauce, five-spice powder, honey, rice vinegar, and a pinch of salt to create a marinade.
- Place the duck leg quarters in a large resealable bag or a shallow dish and pour the marinade over the duck, ensuring it is well coated. Marinate for at least 1 hour, preferably overnight in the refrigerator.
- Remove the duck from the marinade and place it skin-side up on a roasting rack over a baking tray to catch drippings. Reserve the marinade for later.
- Roast the duck in the preheated oven for 1 hour, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
- While the duck is roasting, prepare the Peking pancakes according to package instructions (usually steaming or warming them).
- Once the duck is done, remove it from the oven and let it rest for 10 minutes before carving the meat off the bone.
- To serve, place a few pieces of duck on a pancake, add julienned cucumber and spring onions, drizzle with some reserved marinade, and roll up the pancake.
