- Duck breast - 2 pieces (about 200g each)
- Mixed salad greens (e.g., arugula, spinach, and frisée) - 100g
- Cucumber - 1 medium, thinly sliced
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, thinly sliced
- Fresh cilantro - 10g, chopped
- Green onions - 2, sliced
- Sesame oil - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Soy sauce (gluten-free) - 1 tablespoon

Steps
- Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.
- Season both sides of the duck breasts with salt and black pepper.
- Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium and cook for about 8-10 minutes, or until the skin is crispy and golden brown. Drain excess fat if necessary.
- Flip the duck breasts and cook for an additional 5-7 minutes, or until the internal temperature reaches 65°C (150°F) for medium.
- Remove the duck from the skillet and let it rest for 5 minutes before slicing thinly.
- In a large bowl, combine the mixed salad greens, cucumber, carrot, red bell pepper, cilantro, and green onions.
- In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, and a pinch of salt and pepper to create the dressing.
