Ingredients

  • Duck breast - 2 pieces (about 200g each)
  • Mixed salad greens (e.g., arugula, spinach, and frisée) - 100g
  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Fresh cilantro - 10g, chopped
  • Green onions - 2, sliced
  • Sesame oil - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Soy sauce (gluten-free) - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.
  2. Season both sides of the duck breasts with salt and black pepper.
  3. Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium and cook for about 8-10 minutes, or until the skin is crispy and golden brown. Drain excess fat if necessary.
  4. Flip the duck breasts and cook for an additional 5-7 minutes, or until the internal temperature reaches 65°C (150°F) for medium.
  5. Remove the duck from the skillet and let it rest for 5 minutes before slicing thinly.
  6. In a large bowl, combine the mixed salad greens, cucumber, carrot, red bell pepper, cilantro, and green onions.
  7. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, and a pinch of salt and pepper to create the dressing.
  8. Drizzle the dressing over the salad and toss gently to combine.
  9. Divide the salad between two plates and top with the sliced duck. Sprinkle sesame seeds on top for garnish.
