Ingredients
- Duck breast - 250 grams
- Spring roll wrappers - 4 pieces
- Carrot - 50 grams, julienned
- Cucumber - 50 grams, julienned
- Spring onions - 2, finely sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Hoisin sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - for frying
Steps
- 1. Preheat your oven to 180°C (350°F).
- 2. Season the duck breast with salt and black pepper. Place it skin-side down in a cold skillet, then heat over medium flame until the fat renders and the skin is crispy, about 6-8 minutes.
- 3. Flip the duck breast and cook for another 3-4 minutes until it's medium-rare. Remove from the skillet and let rest for 5 minutes.
- 4. In a bowl, combine the minced garlic, grated ginger, soy sauce, hoisin sauce, and sesame oil. Shred the cooked duck and mix it with the sauce.
- 5. Lay a spring roll wrapper on a flat surface. Place a portion of the duck mixture, along with some julienned carrot, cucumber, and spring onions, in the center.
- 6. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top. Repeat for the remaining wrappers.
- 7. Heat vegetable oil in a deep pan over medium-high heat. Fry the rolls in batches until golden brown and crispy, about 3-4 minutes per side.
- 8. Drain on paper towels and serve warm with extra hoisin sauce for dipping.
