Ingredients

  • Duck breast - 250 grams
  • Spring roll wrappers - 4 pieces
  • Carrot - 50 grams, julienned
  • Cucumber - 50 grams, julienned
  • Spring onions - 2, finely sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Hoisin sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - for frying

Steps

  1. 1. Preheat your oven to 180°C (350°F).
  2. 2. Season the duck breast with salt and black pepper. Place it skin-side down in a cold skillet, then heat over medium flame until the fat renders and the skin is crispy, about 6-8 minutes.
  3. 3. Flip the duck breast and cook for another 3-4 minutes until it's medium-rare. Remove from the skillet and let rest for 5 minutes.
  4. 4. In a bowl, combine the minced garlic, grated ginger, soy sauce, hoisin sauce, and sesame oil. Shred the cooked duck and mix it with the sauce.
  5. 5. Lay a spring roll wrapper on a flat surface. Place a portion of the duck mixture, along with some julienned carrot, cucumber, and spring onions, in the center.
  6. 6. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top. Repeat for the remaining wrappers.
  7. 7. Heat vegetable oil in a deep pan over medium-high heat. Fry the rolls in batches until golden brown and crispy, about 3-4 minutes per side.
  8. 8. Drain on paper towels and serve warm with extra hoisin sauce for dipping.
