Ingredients

  • Duck breast - 300 grams
  • Soy sauce (Kosher) - 2 tablespoons
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Five-spice powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pancakes (Kosher) - 4 pieces
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Spring onions - 2, sliced finely
  • Sesame oil - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a bowl, mix the soy sauce, honey, rice vinegar, five-spice powder, salt, and black pepper to create a marinade.
  3. Score the skin of the duck breast in a diamond pattern, being careful not to cut into the meat. Rub the marinade all over the duck breast, ensuring it gets into the scored skin.
  4. Place the duck breast skin-side down in a cold skillet and heat over medium heat. Cook for about 6-8 minutes until the skin is crispy and golden brown, then flip and cook for an additional 3-4 minutes.
  5. Transfer the duck to a baking dish and roast in the oven for 15-20 minutes, or until the internal temperature reaches 65°C (150°F) for medium rare.
  6. Remove the duck from the oven and let it rest for 5 minutes before slicing thinly.
  7. While the duck is resting, warm the pancakes in a dry skillet for about 30 seconds on each side until soft.
  8. To assemble, take a pancake, add a few slices of duck, and top with cucumber, carrot, and spring onions. Drizzle with a little sesame oil.
  9. Roll the pancake around the fillings, and serve immediately.
