Ingredients
- Duck breast - 300 grams
- Soy sauce (Kosher) - 2 tablespoons
- Honey - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Five-spice powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pancakes (Kosher) - 4 pieces
- Cucumber - 1 small, julienned
- Carrot - 1 small, julienned
- Spring onions - 2, sliced finely
- Sesame oil - 1 teaspoon
Steps
- Preheat the oven to 200°C (390°F).
- In a bowl, mix the soy sauce, honey, rice vinegar, five-spice powder, salt, and black pepper to create a marinade.
- Score the skin of the duck breast in a diamond pattern, being careful not to cut into the meat. Rub the marinade all over the duck breast, ensuring it gets into the scored skin.
- Place the duck breast skin-side down in a cold skillet and heat over medium heat. Cook for about 6-8 minutes until the skin is crispy and golden brown, then flip and cook for an additional 3-4 minutes.
- Transfer the duck to a baking dish and roast in the oven for 15-20 minutes, or until the internal temperature reaches 65°C (150°F) for medium rare.
- Remove the duck from the oven and let it rest for 5 minutes before slicing thinly.
- While the duck is resting, warm the pancakes in a dry skillet for about 30 seconds on each side until soft.
- To assemble, take a pancake, add a few slices of duck, and top with cucumber, carrot, and spring onions. Drizzle with a little sesame oil.
- Roll the pancake around the fillings, and serve immediately.
