Ingredients

  • Duck breast - 200 grams
  • Steamed bao buns - 2 pieces
  • Cucumber - 50 grams, julienned
  • Carrot - 50 grams, julienned
  • Fresh cilantro - a handful
  • Hoisin sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat.
  3. Season the duck breast with salt and pepper on both sides.
  4. Place the duck breast skin-side down in a cold, dry skillet and turn the heat to medium. Cook for about 6-8 minutes until the skin is crispy and browned, then flip and cook for another 3-4 minutes.
  5. Transfer the duck breast to the preheated oven and roast for an additional 10-12 minutes, or until it reaches an internal temperature of 65°C (150°F).
  6. Remove the duck from the oven and let it rest for 5 minutes before slicing it thinly.
  7. In a small bowl, mix the hoisin sauce, rice vinegar, and sesame oil to create a sauce.
  8. Warm the bao buns according to package instructions (usually steaming for about 5 minutes).
  9. To assemble, spread a tablespoon of the hoisin sauce mixture inside each bao bun, add sliced duck, and top with cucumber, carrot, and cilantro.
