Ingredients

  • Duck breast - 2 pieces (approximately 300g each)
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Five-spice powder - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Green onions - 2, chopped for garnish
  • Sesame oil - 1 teaspoon
  • Cucumber - 1 small, thinly sliced (for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.
  3. In a bowl, mix together soy sauce, rice vinegar, minced garlic, grated ginger, five-spice powder, and black pepper to create a marinade.
  4. Rub the marinade thoroughly over the duck breasts, ensuring it gets into the scored skin. Let it marinate for at least 30 minutes, or preferably overnight in the refrigerator.
  5. Place the duck breasts skin-side up on a rack in a roasting pan. Roast in the preheated oven for 25-30 minutes until the skin is crispy and the internal temperature reaches 75°C (165°F).
  6. Remove the duck from the oven and let it rest for 5 minutes before slicing.
  7. Drizzle sesame oil over the sliced duck and garnish with chopped green onions and cucumber slices.
  8. Serve immediately with a small bowl of soy sauce for dipping.
