- Duck breast - 2 pieces (approximately 300g each)
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Five-spice powder - 1 teaspoon
- Black pepper - 1 teaspoon
- Green onions - 2, chopped for garnish
- Sesame oil - 1 teaspoon
- Cucumber - 1 small, thinly sliced (for serving)
Steps
- Preheat the oven to 200°C (400°F).
- Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat.
- In a bowl, mix together soy sauce, rice vinegar, minced garlic, grated ginger, five-spice powder, and black pepper to create a marinade.
- Rub the marinade thoroughly over the duck breasts, ensuring it gets into the scored skin. Let it marinate for at least 30 minutes, or preferably overnight in the refrigerator.
- Place the duck breasts skin-side up on a rack in a roasting pan. Roast in the preheated oven for 25-30 minutes until the skin is crispy and the internal temperature reaches 75°C (165°F).
- Remove the duck from the oven and let it rest for 5 minutes before slicing.
- Drizzle sesame oil over the sliced duck and garnish with chopped green onions and cucumber slices.
- Serve immediately with a small bowl of soy sauce for dipping.
