Ingredients

  • Chicken breast - 300 grams
  • Cornstarch - 50 grams
  • Egg - 1 large
  • Bell peppers (red and green) - 100 grams each, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - for frying
  • Salt - to taste
  • Black pepper - to taste
  • Spring onions - 2 stalks, chopped

Steps

  1. Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
  2. In a bowl, beat the egg and then coat the chicken pieces in the egg.
  3. In another bowl, mix the cornstarch with a pinch of salt and black pepper, then coat the egg-covered chicken pieces in the cornstarch until well coated.
  4. Heat vegetable oil in a frying pan over medium-high heat. Once hot, fry the chicken pieces in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.
  5. In the same pan, add a little more oil if necessary and stir-fry the minced garlic and ginger for 30 seconds until fragrant.
  6. Add the sliced bell peppers and stir-fry for 3-4 minutes until they are tender yet crisp.
  7. Return the crispy chicken to the pan, and pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together and stir-fry for another 2 minutes.
  8. Remove from heat and garnish with chopped spring onions before serving.
