Ingredients

  • Chicken breast - 300 grams
  • Eggplant - 200 grams
  • Cornstarch - 50 grams
  • All-purpose flour - 30 grams
  • Egg - 1 large
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Cooking oil - 100 ml (for frying)
  • Green onions - 2, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. Cut the chicken breast into bite-sized pieces and marinate with soy sauce, minced garlic, minced ginger, salt, and black pepper for 15 minutes.
  2. While the chicken is marinating, slice the eggplant into half-moon shapes and sprinkle with salt. Let it sit for 10 minutes to draw out moisture, then rinse and pat dry.
  3. In a bowl, combine cornstarch and all-purpose flour. In another bowl, beat the egg.
  4. Heat cooking oil in a large skillet or wok over medium-high heat.
  5. Dip each marinated chicken piece into the egg, then coat with the flour mixture, shaking off excess flour.
  6. Fry the chicken pieces in the hot oil for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.
  7. In the same skillet, add more oil if necessary, and stir-fry the eggplant for about 5-6 minutes until tender and slightly caramelized.
  8. Add the crispy chicken back to the skillet with the eggplant, sprinkle with chili flakes, and drizzle with sesame oil.
  9. Toss everything together for about 2 minutes to heat through and combine flavors.
  10. Garnish with chopped green onions before serving.
