Ingredients
- Chicken breast - 250 grams, diced
- Cashews - 50 grams, unsalted
- Bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Oyster sauce - 1 tablespoon
- Cornstarch - 2 tablespoons
- Egg - 1, beaten
- Vegetable oil - 3 tablespoons for frying
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine diced chicken, beaten egg, cornstarch, salt, and black pepper. Mix until the chicken is well coated.
- Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat. Add the coated chicken and fry until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add 1 tablespoon of vegetable oil. Sauté minced garlic and grated ginger until fragrant, about 30 seconds.
- Add the sliced bell pepper, julienned carrot, and chopped green onion to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Return the crispy chicken to the skillet. Add soy sauce and oyster sauce, tossing everything together until well combined.
- Add the cashews and stir-fry for another 1-2 minutes until heated through. Adjust seasoning with salt and pepper if needed.
- Serve hot over steamed rice.
