Ingredients

  • Chicken breast - 250 grams, diced
  • Cashews - 50 grams, unsalted
  • Bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Egg - 1, beaten
  • Vegetable oil - 3 tablespoons for frying
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine diced chicken, beaten egg, cornstarch, salt, and black pepper. Mix until the chicken is well coated.
  2. Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat. Add the coated chicken and fry until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add 1 tablespoon of vegetable oil. Sauté minced garlic and grated ginger until fragrant, about 30 seconds.
  4. Add the sliced bell pepper, julienned carrot, and chopped green onion to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Return the crispy chicken to the skillet. Add soy sauce and oyster sauce, tossing everything together until well combined.
  6. Add the cashews and stir-fry for another 1-2 minutes until heated through. Adjust seasoning with salt and pepper if needed.
  7. Serve hot over steamed rice.
