- Broccoli florets - 150 grams
- Carrot - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Chicken broth - 500 milliliters
- Soy sauce - 2 tablespoons
- Cornstarch - 2 tablespoons
- Egg - 1, beaten
- Vegetable oil - 3 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped for garnish
Steps
- Cut the chicken breast into thin strips and season with salt and black pepper.
- In a bowl, combine the chicken strips with cornstarch and mix until well-coated.
- Heat 2 tablespoons of vegetable oil in a pan over medium-high heat. Add the chicken strips and fry until golden and crispy, about 5-6 minutes. Remove and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the sliced carrot and broccoli florets to the pan, stir-frying for 3-4 minutes until they start to soften.
- Pour in the chicken broth and soy sauce, and bring to a simmer. Let it cook for about 5 minutes.
- In a small bowl, beat the egg and slowly drizzle it into the simmering soup while stirring to create egg ribbons.
- Add the crispy chicken back into the soup and stir gently. Drizzle with sesame oil and cook for an additional 2 minutes.
- Serve hot, garnished with chopped green onions.
