- Cornstarch - 50 grams
- Egg - 1 large
- Panko breadcrumbs - 50 grams
- Mixed salad greens - 100 grams
- Cucumber - 1 medium, sliced
- Carrot - 1 medium, julienned
- Red bell pepper - 1, thinly sliced
- Spring onions - 2, chopped
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - for frying
Steps
- Begin by slicing the chicken breast into thin strips and season with salt and black pepper.
- In a bowl, whisk together the egg, then dip each chicken strip into the egg, followed by coating it with cornstarch, and finally with panko breadcrumbs to create a crispy coating.
- Heat vegetable oil in a frying pan over medium heat. Once hot, add the coated chicken strips and fry until golden brown and cooked through, about 5-7 minutes. Remove and place on paper towels to drain excess oil.
- In a large bowl, combine mixed salad greens, cucumber, carrot, red bell pepper, and spring onions.
- In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey to create the dressing.
- Once the chicken is crispy, add it on top of the salad and drizzle with the dressing. Toss gently to combine before serving.
