Ingredients

  • Chicken breast - 300 grams
  • Cornstarch - 50 grams
  • Egg - 1 large
  • Panko breadcrumbs - 50 grams
  • Mixed salad greens - 100 grams
  • Cucumber - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1, thinly sliced
  • Spring onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - for frying

Steps

  1. Begin by slicing the chicken breast into thin strips and season with salt and black pepper.
  2. In a bowl, whisk together the egg, then dip each chicken strip into the egg, followed by coating it with cornstarch, and finally with panko breadcrumbs to create a crispy coating.
  3. Heat vegetable oil in a frying pan over medium heat. Once hot, add the coated chicken strips and fry until golden brown and cooked through, about 5-7 minutes. Remove and place on paper towels to drain excess oil.
  4. In a large bowl, combine mixed salad greens, cucumber, carrot, red bell pepper, and spring onions.
  5. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey to create the dressing.
  6. Once the chicken is crispy, add it on top of the salad and drizzle with the dressing. Toss gently to combine before serving.
