  • Egg - 1 large
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Bell pepper (mixed colors) - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Soy sauce (or coconut aminos) - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix the almond flour, paprika, cumin, garlic powder, salt, and black pepper.
  3. In a separate bowl, beat the egg and set aside.
  4. Cut the chicken breast into strips and dip each strip first into the egg, then into the almond flour mixture, ensuring they are well-coated.
  5. Arrange the coated chicken strips on the prepared baking sheet and drizzle with 1 tablespoon of olive oil.
  6. Bake in the preheated oven for 15-20 minutes, or until the chicken is golden brown and crispy.
  7. While the chicken is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat.
  8. Add the sliced bell pepper and onion, sautéing for about 5-7 minutes until they are tender and slightly caramelized.
  9. Stir in the soy sauce and lime juice, cooking for an additional minute before removing from heat.
  10. Once the chicken is done, serve it with the sautéed vegetables, garnished with fresh cilantro.
